Saucey Roasted Sweet Potatoes & Challots

This easy & delicious recipe will tantalize your palate with the incredible, flavorful ginger zing!


“Kung Pao” Chicken w/ Spicy Garlic Sauce












Serves 8


Ingredients


1 shallot, finely sliced

¾ cup apple cider

½ cup dark pure maple syrup

1 teaspoon chopped fresh thyme leaves, plus a few sprigs for the roasting pan

¾ teaspoon kosher salt

½ teaspoon ground black pepper

8 bone-in chicken thighs

3 medium apples, peeled, cored and quartered


Method:


  1. Preheat the oven to 375°.

  2. In a large bowl, combine sweet potatoes and shallots.

  3. Add olive oil, sprinkle with salt and pepper; toss well to combine.

  4. Spread potatoes and shallots in single layer on rimmed baking sheet.

  5. Bake for 25 – 30 minutes or until tender. Stir halfway through.

  6. Remove from oven and finish by drizzling vegetables with the Brown Sugar Ginger Glaze Saucey Sauce and toss well.
