Ginger Brined Turkey

We all know that the centerpiece of Thanksgiving dinner is the turkey.
All too often, this flightless bird is over-roasted, dry, and a bit bland. EASILY remedy this flavor-situation by brining your turkey the night before with Sweet Ginger Saucey Sauce. Then glaze it with our awesome Brown Sugar Ginger Glaze for a sweet & savory crackle.
The savory brine acts as a tenderizer for the meat, leaving the turkey moist and juicy!

Ingredients:
1 (14 to 16 pound) young turkey
For the brine:
1 bottle Sweet Ginger Saucey Sauce
1 bottle Brown Sugar Ginger Glaze (for finishing)
1/2 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1 lemon, sliced
1/2 onion, sliced
4 sprigs of rosemary
4 leaves of sage
4 sprigs thyme
Method:
Combine the Sweet Ginger Saucey Sauce, salt, sugar, vegetable stock, peppercorns, lemon, onion, rosemary, sage, and thyme in a large stockpot over medium-high heat.
Stir until salt and sugar are dissolved.
Bring to a boil, then remove the brine from the heat, cool to room temperature, and refrigerate.
Place cooled brine in a 5-gallon bucket. Add the turkey and cover.
Refrigerate or set in a cool area for 8 to 16 hours, turning the bird once halfway through brining.
To cook, remove the turkey from the brine and cook as directed until the turkey is tender and cooked through.
In the last 30 minutes of cooking time, brush the bird with Brown Sugar Ginger Glaze and let it crust nicely for a finishing touch!
You can even cook the gingery drippings into an especially amazing and flavorful gravy!
