Spicy Crispy Collards

Not realizing that as kids we were eating collard greens, we loved our mom’s Canh Cai La Xanh. This Vietnamese Collard Greens Soup is nice and spicy – just how we like it!
Now, instead of making a big pot of soup, we get our collard fix with this quick and easy side dish!

Ingredients
1 bunch of collard greens, trimmed and washed
1 shallot, sliced
1 small bag of crunchy Asian noodles
2 teaspoons of oil (any kind)
3 tablespoons of Spicy Garlic Sauce
2 tablespoons crispy fried onions
Method:
In a small pan, heat Oil on medium-high heat
Add shallots and cook for 4-5 minutes or until brown.
Add Collard Greens and saute for about 5 minutes or until wilted.
Turn off the heat, stir in Spicy Garlic Sauce, and top with Crispy Onions!
